WHAT
- 20 to 24 oz fatty salmon (fillet or tail)
- 1 TBSP brown sugar
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 TBSP Locally Seasoned Garlic and Herb Compound Butter
HOW
- Adjust rack to center position. Preheat oven to 300°F. Line baking sheet with parchment paper.

- Bake for 30-35 minutes or until 125°-130° in the center and salmon is buttery soft and tender.
- A few minutes before salmon is done, in a small pan on the stove, melt Garlic and Herb Compound Butter.
- Carefully unfold parchment packet. Pour compound butter over each piece.
- Serve with a squeeze of citrus.
