It's time for a reality check.
The specialty food landscape is changing. While the call for artisanal small batch foods has increased, larger food producers have tapped into the growing demand. They do this by creating the illusion of exclusivity and craftsmanship, competing directly with genuine artisanal makers like us.
Larger producers are now leveraging their existing ability to purchase in mass scale while marketing themselves as a small business. Small batch makers like us simply can not match their production capabilities or marketing budgets. Larger companies are creating convincing artisanal-style packaging. Some even maintain small-scale production facilities for marketing purposes.
Genuine small-batch producers struggle to compete with the resources and reach of larger companies masquerading as artisanal makers.
We’ve observed this shift toward mass produced items marketed as small batch. In 2023 we researched what it would take to scale up. The first thing every industry expert we spoke to said when we started to discuss co-packing and mass production was that we’d have to compromise quality to meet the requirements for scaling up. We heard this over and over. Certainly there must be another way.
Then we did some traveling and discovered that there are many customers who seek out unique culinary experiences. Customers who consciously support sustainable food suppliers.
The fact is small batch makers like us are more sustainable because we have closer ties to our suppliers. We develop loyal relationships with suppliers, retailers and customers. This makes it easier to know who is making your food and from where it comes. For example, when we purchase tomatoes, blueberries and apples we buy them directly from our community. We can tell you who grew the peaches in your chutney. We can create micro-batches to use what is in season and plentiful. We reflect the skills and dedication of generations of home cooks.
Simply put, genuine small batch makers preserve local traditions, are more sustainable and keep more money in the local economy. Large scale producers that focus on volume over technique, can not compete with our authenticity, sustainability and flexibility. Our customers can see and taste the difference.
As consumers increasingly seek out local and artisanal foods that reflect their values and support sustainable practices, we offer the ability for customers to explore and discover new flavors.
