Curried Beef Stuffed Zucchini

serves 1 to 2

*1 medium zucchini
*1/2 lb lean ground beef
*1/2 cup fresh spinach, chopped small
*1/4 cup minced onion
*2 tsp extra virgin olive oil
*1/2 tsp kosher salt
*pinch of black pepper
*contents of .2 oz packet
*1/4 tsp lemon zest
*Follow cooking directions below.

*2 medium zucchini

*1 tsp kosher salt
*1/8 tsp black pepper

*1/2 tsp lemon zest

serves 2 to 4

**2 medium zucchini
*1 lb lean ground beef
*1 cup fresh spinach, chopped small
*1/2 cup minced onion
*2 tsp extra virgin olive oil
*1 tsp kosher salt
*1/8 tsp black pepper
*4 tsp Madras Curry Blend
*1/2 tsp lemon zest
*Follow cooking directions below.

*Preheat oven to 350° F. Prepare a baking dish with non-stick spray.
*Cut zucchini in half lengthwise. Hollow out each zucchini half to make "boats". Cut a very thin strip off the bottom to keep it from rolling in the baking dish. Place zucchini boats in the baking dish.
*Chop what was scooped out of the zucchini center as well as the thin strip from the bottom.
*In a pan on the stove, saute onions and chopped zucchini in olive oil until translucent. Approximately 5 to 8 minutes. 
*Add ground beef and spinach and cook until beef is just done. Strain off any excess liquid.
*Mix in Locally Seasoned Madras Curry Blend, salt and pepper. 
*Spoon beef and spinach mixture into zucchini "boats".
*Cover with aluminum foil and bake for 30 to 35 minutes. They're done when a fork, inserted in the center, goes all the way to the bottom.
*Garnish lightly with lemon zest and serve. Happy eating!

*1 small potato, diced
*1 small carrot, peeled and chopped
*1⁄4 cup chopped cauliflower
*1⁄2 cup coconut milk
*1⁄4 cup frozen peas
*2 Tablespoons fresh cilantro (chopped)

Vegetable Curry

*Heat oil in a skillet on the stove top over medium heat. Add onion and cook until translucent. Approx 5 to 8 minutes.
*Stir in Locally Seasoned Madras Curry Blend and cook for 1 minute.
*Reduce heat to low. Add tomatoes, potatoes, carrots, cauliflower and coconut milk. Cover and bring to a simmer. 
*Simmer on low, stirring occasionally for about 8 to 10 minutes. Check to be sure carrots and potatoes are done by sticking a fork through one.
*Turn off heat. Taste and add a little kosher salt only if needed. Stir in peas and cilantro. 
*Serve over rice or with flat bread. Happy eating!
