Oven Roasted Boneless Chicken Breast

*Empty contents of spice packet into a medium bowl.
*Add 1 Tablespoons extra virgin olive oil and stir well.
Follow baking directions below.

*Add 2 Tablespoons extra virgin olive oil and stir well.
Follow baking directions below.

*Measure 4 teaspoons of cumin paprika spice blend into a medium bowl.
*Add 2 Tablespoons extra virgin olive oil and stir well.
Follow baking directions below.

*Preheat oven to 425° F.
*Prepare a rimmed baking sheet with aluminum foil or parchment paper.
*Using a meat pounder or mallet, pound chicken evenly to about 1/2 inch thick. If your chicken breast is very large, cut in half and pound each half. See note below.
*Place pounded chicken in the bowl of spice mixture and smear all over the meat. Be sure to cover all sides. This can be done up to 30 minutes ahead of time for marinating but it's not necessary.
*Arrange chicken on prepared baking sheet. Bake for 18 to 20 minutes depending on your desired doneness.
*Allow to rest for 3 to 4 minutes before serving.

NOTE: To work clean, you can place chicken inside a large ziplock bag or between two sheets of plastic wrap before pounding. This helps keep juices and bits from flying as you pound. You can re-use bag or plastic wrap for each chicken breast as long as it doesn't tear.
