Baked Pork Tenderloin

*Empty contents of spice packet into a medium bowl.
*Add 1 Tablespoons extra virgin olive oil and stir well.
*Place 1 lb pork tenderloin in bowl and smear spice mixture all over the meat. Be sure to cover all sides.

*Place 2 to 2 1/2 lb pork tenderloin in bowl and smear spice mixture all over the meat. Be sure to cover all sides.

*Measure 4 teaspoons of cumin paprika spice blend into a medium bowl.
*Add 2 Tablespoons extra virgin olive oil and stir well.
*Place 2 to 2 1/2 lb pork tenderloin in bowl and smear spice mixture all over the meat. Be sure to cover all sides.

*Preheat oven to 400° F.
*Prepare a baking dish with nonstick spray or oil.
*Place tenderloin in prepared baking dish. Scrape any remaining spice mixture over the top of tenderloin.
*Bake 25 to 35 minutes depending on size of your tenderloin. You want crispy brown edges and a center that is done to your liking. Ladle pan juices over the top of your roast.
*Allow to rest for 5 to 10 minutes before cutting. Cut into 1 inch slices. Spoon remaining juices over the top and serve.

NOTE: This recipe is flexible. Use 1 to 2 small pork tenderloins or one larger piece. Recipe easily doubles or triples.

Baking Directions

*Preheat oven to 425° F.
*Prepare a rimmed baking sheet with parchment or non stick spray.
*Place prepared chops on baking sheet. Scrape any remaining spice mixture over the top of chops.
*Bake 18 to 20 minutes depending your desired doneness. Thinner chops will take less time and bone-in chops will take more time. 
*Allow to rest for 5 minutes before serving.
